Man, is it already Wednesday??? I think I am doing very well! With just a couple of exceptions I have managed to be pretty hardcore Organic, and the food is proving quite delish, and I am feeling pretty good so far! :) OH! And OMG, so when I was at Walmart I grabbed some Flax Seed! All it says it contains is milled flaxseed so I think that is about as natural as you can get. It says that 2 tablespoons is like 2,000 something mg or mcg of Omega 3!!! And that it is only 60 calories and can substitute for oil and fats in some recipies! How awesome is that!?! And it is a great source of fiber which helps keep you full. I can't have whatever it is that is in the Fish Oil capsules so this is great. I added it to both my morning oatmeal AND to my eggs. It was actually really good because I cannot taste it! And it has kept me QUITE full today! I have like 200 calories left for the day so I am currently pondering what to spend them on... :] We shall see!

Back in the Saddle!!!
I have not posted on in literally years because we have not had a computer. So as you can imagine I have been going nuts with all of my new ideas swirling around in my head as well as wanting to share my life experiences with you all. So, today I am picking back up! My Organic Week, Day Two (Tuesday)
THE best cheese that money can buy. ;)
Today started off with a nice big bowl of oatmeal. I was a good girl today though and only used stevia to sweeten it this time. ;) I brought my lunch to work with me (yay!) and had another grilled chicken salad but this time I added Couscous. Whatever the heck that is, lol. I felt very mediterannean, lol. It was yummy! However since I did not bring enough food from home I did sneak a handful of non "O" chips. Note to self for next time! Once I got home at around 4:45 I was basically starving and had gotten off late so I THEN got to try out some good ol' free range, no hormnes added eggs!!! O to the M to the G...those were so good! Bordering on "cheese" good, lol! I added them to the nachos recipie I made up last night. Yummmm. I can't believe how tasty they were. This is all so very fun and insightful! I have met my caloric limit for today but in case I just can't go on I will have some rice-cereal that I make from the cakes. :D
So I did have more cereal, and a couple of non "O" cookies too, BUT with organic milk. :D P.S., The cookies made my stomach feel like lead. :/ You guessed it (Next time grab some cookies too!) ;P
P.S.S., I got a Magic Bullet for my Bday and I can't WAIT to start cooking with it! I got some O potatos so perhaps I can make some mashed taters tomorrow. :D Wishing I had bought some fruit now! ;P
P.S.S.S., So I TOTALLY forgot to mention the organic instant tea I have been drinking each day. It is like 90 calories per serving tho so that is alot for me since I normally drink Kool Aid sweetened with stevia and it is like 40 calories per serving. Were I to do this again I guess I could just get the kind you brew which requires not being lazy but is definatly cheaper, lol.

My Organic Week: Day One (Monday)
My Organic week: Day One (Monday)
Well, as I type I am smelling the aroma of my very first organic piece of chicken. :D I already had some yummy rice cereal and milk courtesy of some caramel rice cakes. It was great, and only 90 calories! :D
Grilled chicken salad was YUM! Especially the cheese!!! I don't think I've ever had better! I am not sure if I noticed a huge difference with the chicken taste but like I said, it was all delish. :) (Plus I will have all week do discover how the chicken is since I got like 8 thighs, lol.) I did use my regular balsamic dressing becasue I didn't think of that while I was at the store but I am sure it did not make a gigantic difference, lol. I will likely have oatmeal tonight and possibly hit up Kroger for some O-preserves. Just saying this is random but I really need a nap. Lol.
Definatly am loving the caramel rice cakes! I had four more via milk and cereal. They are gluten-free. I didn't see "organic" on the label but I know that a lot of people are going sans the gluten for many reasons so I thought I would throw that in there and see how it vibes with my system. I had some oatmeal too which was pretty yum. I did use a little regular butter and jam but like I said, I can get more during the week. ;) I have felt pretty okay and have been enjoying how easy it is to have my favorites. I made some nachos with organic tortilla chips and organic shredded cheese. It was SO GOOD! I have already decided that organic cheese is the best. It is like I'd never had cheese before until today. So rich and full of flavor...which brings me to another point about organic food, the one downside that I can think of other than it being more expensive is that it seems hard to find low-calorie things because a lot of diet items have been processed heavily in order to be that way (low-cal) so that is something I have had to watch because like I said, the food is SO GOOD! Now, right now I could definatly eat something sweet, but I am at my calorie limit for today so I am going to have a big glass of water and sleep hard because I never got my nap in, lol. Anywho I really hope I can get back to Whole Foods or Kroger soon so I can grab a few things I had forgotten. (BTW, as soon as I have two seconds I will dig for my recipt in my purse so I can remember how much everything all cost. It wasn't a lot though, and as the week progresses I can get a better grasp on how long it lasts, what things I eat more than others etc...) I am sharing my goods with the fam and already using up a bit more than I'd expected because it is that good! Oh, and it's uber healthy. ;D Until Tuesday my friends!!!

Amber's Healthy Deep Dish Pizza
Soooo I tried this for the first time today and OMG, YUM! I love it because it tastes VERY "deep-dishy" BUT only has about 210 calories per slice!!!Ingredients:
1 1/3 cup of Great Value Itallian blend mozzerella cheese
4 oz Jimmy Dean Sage Breakfast Sausage
1/2 Cup of Prego Fresh Mushroom Pizza Sauce
17 Slices of Hormel turkey pepperoni
10 Slices of Walmart Bakery texas garlic toast
Prep:
Preheat Oven to 425. Brown Sausage and drain. Lay Bread on cookie sheet or cookie sheet with foil (I used foil instead of PAM to get it good and crispy) then evenly distribute sauce on all of the bread slices. Next, distribute half of the cheese over the sauce. Put sausage and pepperoni over the cheese (You can slice the pepperoni if you like). Last, lay second half of cheese over the meat. Put in the oven for about 12 min or until cheese is melted and sides of bread look slightly brown. Let cool just a bit, and ENJOY! :D Hope I didn't leave anything out, lol. ;P

I feel like chicken tonite! Like chicken tonite!
So I got some delish chicken from Wally World last night. :) It is boneless/skinless chicken thighs that are only 130 calories per 4-0z serving! It is yummy when you grill it (I have a George Forman Grille) and then top it with fat free cheese and salsa. Dang, I should have taken a picture! Oh well, next time! It is all only 185 calories! And of course if you make it a salad it will be even more filing for like 5 more calories. :) Anywho I am finding success so far with my new calorie plan. I have lost 9 lbs which brings me about to where I was right before I hurt my legs and then gained it all back from being depressed, lol. I am managing low-impact walks and finding quite a bit of success there! :) Anyways, Ryder is climbing in my lap and poking my face and laughing so I better go and entertain this little toot, lol. :D

Sooooo I had some fun in the kitchen today cooking up some healthy versions of my favorite dishes! I love cheese and I love eggs but dang, y'all know those calories add up! So today at the store I picked up some Eggbeaters and fat-free cheese and thought I would give it a go. Everything turned out pretty good! I am having some seasonal allergy issues so my sense of taste is slightly off, but I think you'll enjoy it! On a calorie note, today has gone great. I had Malt-O-meal, 100 calories, the breakfast burrito you see here, 240 calories, two glasses of iced tea, 90 calories, two bowls of peaches and cream oatmeal, 260 calories, one quesadilla, 200 calories, leaving me with 200 calories left for the day. I am thinking more oatmeal... Anyways, here are the recepies for today. Note: I am going to omit the ground turkey because I could barely taste it and it added 50 calories to the mix so I say to heck with it, lol.
Garden Breakfast Burritos
Yeilds one burrito 205 Calories
Ingredients:
--Small Tortilla (110 cal)
--Lettuce and 1 tbsp onions (10 cal)
--1/4 cup of Egg Beaters (30 cal)
--1/4 cup of fat free shredded chedder cheese (45 cal)
--2 Tbsp of Salsa (10 cal)
--Salt, Pepper, and Garlic
Layer ingredients on top of the tortilla as follows: Tortilla, lettuce, and cheese. Set aside. Next mix egg, onions, and seasonings, spray pan for a second with Pam, then scramble eggs until done. This takes like maybe less than a min if the pan is good and hot, lol. Once the eggs are cooked lay them on the cheese then top with salsa. It is important to spread them out evenly because at this point you roll it all up into a burrito, and cut in half. Yay! You might need more salt but like I said, I kind of can't breath right now so it may taste different to non-allergy sufferers, lol.

Ingredients

--1 tbsp onions (5 cal)
--1/4 cup of fat free shredded chedder cheese (45 cal)
--2 Tbsp of Salsa (10 cal)
--Salt, Pepper, and Garlic
On quesadilla, place cheese, onions and spices, and fold over. Spray pan with Pam and grill on both sides until crispy brown! :)
